Veggie Platter with Simple Vinaigrette

Veggie Platter with Simple Vinaigrette



Ingredients:

baby carrots - 1 package
cucumber - 1, sliced thin
grape or cherry tomatoes - 1 package
radishes - 1 bunch, trimmed
kale - 2-3 leaves (for garnish)


Vinaigrette

extra virgin olive oil - 1/4 cup
good quality balsamic vinegar - 1 Tbsp
sea salt - to taste
freshly ground black pepper - to taste


Preparation:

-Combine vinaigrette ingredients in a small bowl.
-Arrange kale on a large platter. Top with veggies. Place bowl on or alongside platter.
